Here's an other classic, tasty dish.
Also ready in less than 30 minutes (very, very important
)
And again with no meat.
Risotto
Ingredients: (for 4)
olive oil
1 onion or chalot onion
2 cloves of garlic
a few (2) twigs of thyme (a teaspoon if you don't have the fresh stuff)
risotto rice for 4 (~400g) (risotto rice has shorter, almost round grains (Arborio rice or carnaroli are great))
A glass of white wine
1l chicken bouillon or chicken stock
250g mushrooms (Chestnut Mushroom or even better Porcini)
50g butter
100g Parmesan cheese
pepper and salt
directions:
Mince the garlic and onion and fry them on an average fire in olive oil 'till they become glassy.
Add the thyme and the rice and keep stirring slowly untill the rice becomes ( yes ......) glassy, make sure the rice has been coated by the oil.
Extinguish with the wine and reduce the fire a bit .
When the wine has been absorbed slowly add some of the bouillon.
Some people say you need to stir constantly some say it's a death crime to stir, so I tend to stir slowly.
Keep adding the boullion in small gulps; when the rice almost absorbed the bouillon add some more and repeat untill the rice is ready (takes a bit less then 20 minutes).
In a second pan (yes you need 2) fry the coarsly chopped mushrooms on a high fire for 5 minutes.
With the last gulp of bouillon, mix in the mushrooms.
Reduce the fire and stir in the butter and parmesan. Season with pepper and salt.
Serve when ready.

This is a great recipe and it only takes about a half hour from start to finish.
CREAMY CHICKEN & CHILE ENCHILADAS
1 pound uncooked chicken breast strips
1 package (8 ounces) cream cheese, cut into strips
1 can (4.5 ounces) chopped green chilies
1 package (12 count) flour tortillas for soft tacos & fajitas
2 cans (10 ounces each) green chile enchilada sauce
3/4 cup shredded cheddar cheese (3 ounces)
Heat oven to 400 degrees.
Lightly grease 13x9x2-inch retangular baking dish. Cook chicken in 10-inch skillet over medium-high heat, stirring occasionally, until no longer pink in center.
Add cream cheese and chiles; reduce heat to medium. Cook and stir until blended and cream cheese is melted.
Spoon chicken filling onto tortillas; roll up and place seam side down in baking dish. Pour enchilada sauce over top; sprinkle with Cheddar cheese.
Bake 15 to 20 minutes or until hot and cheese is melted.

I'm always right. I'm also a jerk. It's not my fault you can't get over the latter to see the former.

This is excellent and so easy! You just dump it all in a pot and let it go. It makes a huge amount so use a big pot. Great for parties in case any of you fellows are planning a superbowl get together. Of course, if you like it spicier, just add some chili powder till it's as hot as you want. Or hot sauce or cayenne. Whatever you prefer.

Made this last night and it was a smashing sucess..
Spicy BBQ bacon wrapped shrimp:
Ingredients;
2 pounds large tiger shrimp (fresh is best)
12-20 kabob skewers(soak wooden skewers for 20 minutes in water to prevent burning)
1 lb. fresh maple bacon
1 bottle Famous Daves devil spit BBQ sauce (anything will do but that sauce is the bomb..literally)
Peel and devein skrimps, leaving tail on. Cook bacon but only halfway until it is opaque.
Wrap partially cooked bacon around each shrimp, securing them with the kabob skewers.
Apply GENEROUS amounts of devils spit to your kabobs.
Grill for 7-10 minutes turning once and apply another dose of sauce right before serving.
Trust me if you like grilled food and shrimp you will love this.
